Holyrood Distillery is a whisky and gin distillery located in Edinburgh's historic old town. Established in 2019 by Rob and Kelly Carpenter and David Robertson, it is the first single malt distillery to open in Edinburgh in nearly a century. The distillery draws inspiration from the city's brewing heritage, which dates back to the 12th century. Holyrood Distillery focuses on creating distinctive whisky products and is known for experimenting with specialty malts and various yeasts. In addition to whisky, the distillery produces gin, offering a unique dual experience. They have released a series of casks called "MADE by EDINBURGH," celebrating the local brewing tradition. Visitors can enjoy tours and tastings to learn about the whisky-making process and explore the distillery's facilities. In 2025, Holyrood Distillery received the global Icons of Whisky award, recognizing its growing reputation in the industry.
